It’s possible to add the taxonomy custom field to attachments which then show up in the gallery custom field however I can’t create new tags/cats within the ACF gallery, I can only select existing ones.
Is it possible to make it so I can create taxonomies inside of the gallery?

Thanks for the question, but at the moment this is not possible. The taxonomy field can only be used to select existing terms, not create new ones.
hopefully I can add to this field type soon, but for now it is not possible.

The only solution I can think of is to create a custom field type to add in the extra logic.
