Was looking at the render_field method of select fields, and it allows for placeholder but there is no such field in admin when selecting field : select.
Moreover, can you not force the leading/trailing dash on the placeholder, allowing the user to fully customize it ?

Thanks for the feature request.
I am not however very clear on the functionality.
Do you think you could achieve the same desired result while using the default value option which is available on the field’s edit page?
