Manage Inventory/Stock in Custom fields

Hi,

I created a restaurant website and added custom fields for multiple selections of add-on.

Now My concern is to manage inventory/stock in the add-on field..
For example I want to add some limited options that only limited people can avail and after that it shows that that option is out of stock.. Like kinda running a promotion for limited time.

is that a possibility. Please guide if so
