I already know how to include ACF in a plugin / theme.
But I would like to know if there are two (or more) plugins that include ACF how that gets handled. Will only one instance of ACF load? If not, is it a problem? If so then how can I handle it so that if ACF is already installed or included in another plugin so that my version doesn’t load.

ACF will only load once no matter how many plugins it’s added to. The first version encountered during the load will be the version that is loaded. the order in which WP loads plugins is not set in stone, it changes every time a plugin is activated.
