How to create an archive template based on custom field?

Not sure where to ask this and I thought that this community may have encountered this.

I’m building a product release date calender. Each post will have a custom field with the release date in it.

I’d like to use WordPress’s already built in archive functionality with the release date instead of the post date so that I can display an archive of previous release dates.

If I use the post date as the release date, I’m not able to display future release dates because they won’t be published.
Anyway to modify the archive functionality so that it uses a custom field instead?
