Dynamically Populate a taxonomy field list

HI,

Should i use function my_acf_load_field( $field ) to Dynamically Populate a taxonomy field list with existing taxonomy terms value ?
I saw https://www.advancedcustomfields.com/resources/dynamically-populate-a-select-fields-choices/ but does not suits.

Is it possible instead to unset value from a list ? I mean , i set a taxonomy field with terms and i unset terms the terms with conditional logiuc ?

MyTaxo {one, two, three, four}

if … MyTaxo {one, two, four}
if … MyTaxo {one}
…
