I am trying to make the decision between adding different post types for Brands of car vs models of car or whether to have a Car related content type and then have hidden field groups for brand and car so that one content type could do both with a field selector to select if you are adding a brand or a car. That way you could have parents and children where two content types this would be difficult.
Can anyone advise which is best / best practice.

From your description, I would recommend making use of custom post types.
Using this approach you can be able to add extra attributes to the posts more manageably.
