Exclude certain categories in Taxonomy field type

I added the taxonomy field to my custom post type. When I am editing or creating a new post for this custom post type, while selecting the category from the drop down, I want to certain categories from that taxonomy to not show here. How can I do this? Is there some custom functions code that I can add to exclude displaying certain categories?
