I’ve been trying to work out a way to dynamically add new sidebar areas based on ACF field values.
Is this a functionality within ACF Pro or does anyone know any plugin which I can link with ACF to dynamically create new sidebar areas for widgets to be dropped into.

There isn’t any way to dynamically create WP Side Bars using ACF. There used to be a couple of plugins available for selecting what sidebar to add to a page (https://wordpress.org/plugins/acf-sidebar-selector-field/) or to dynamically select widgets for a page (https://wordpress.org/plugins/advanced-custom-fields-widget-area-field/) but neither of them has been updated in more than 2 years. Your best bet for finding a solution would probably be to look at these plugins and figure out what they were doing and then build something.
I have not used a widget outside of “Blog” related pages since I started using ACF. ACF, at least for me, removes the need to use widgets and sidebars.
