I have a site using ACF and custom post types (services, solutions, resources). The way it was working originally (and correctly) is that when you created a post or service or solution, you could add resources to it so it would show up on the resource pages. At some point, there was a change made and now the list only shows
‘posts’ and not solutions or services.
the original services still show, but you can’t add new ones.

I have no idea what’s causing this or event how to trouble shoot it. I did at one point have CPT-onomies installed, but that is deactivated now.
How to do get this to show services, solutions, and resources instead of (only) posts?

I’ve never used CPT-onomies. Was this plugin used with the post types that are no longer appearing? If you install and reactivate that plugin does it start working again?
