All values are saved into the wp_postmeta table, so if you have a backup, you can simply find the rows where the meta_key = the ACF field name.
Also, most post types have revisions and ACF will have saved it’s values into these revisions. Perhaps you can simply revert a post back to an older revision to find it’s values?
