On a scale of 1 to 10 I would give it a 9.9. You’re probably looking at rebuilding the entire site. Not only would you need to create the ACF fields and find a way to move the data from the old fields to the new fields, you’d also need to modify all the theme’s files to use ACF code rather than whatever method you’re using now.
