There isn’t any way to dynamically create WP Side Bars using ACF. There used to be a couple of plugins available for selecting what sidebar to add to a page (https://wordpress.org/plugins/acf-sidebar-selector-field/) or to dynamically select widgets for a page (https://wordpress.org/plugins/advanced-custom-fields-widget-area-field/) but neither of them has been updated in more than 2 years. Your best bet for finding a solution would probably be to look at these plugins and figure out what they were doing and then build something.
I have not used a widget outside of “Blog” related pages since I started using ACF. ACF, at least for me, removes the need to use widgets and sidebars.
