Images get cropped off when the image ration does not match the image size ratio (in this case 3:2) and the image size is set to crop the image. This has to do with WP and your theme, or whatever is adding that image size, and nothing to do with the gallery field https://developer.wordpress.org/reference/functions/add_image_size/
