_edit_last, is not a meta value that ACF sets when updating a post using acf_form().

This is something that you’ll need to set yourself using either an acf/pre_save_post https://www.advancedcustomfields.com/resources/acf-pre_save_post/ or acf/save_post https://www.advancedcustomfields.com/resources/acf-save_post/ filter.
