I believe you can do it like this:

function my_acf_prepare_field( $field ) {
	
    $field['label'] = "Changed Label";
    $field['instructions'] = "Changed Instruction";

    return $field;
    
}
add_filter('acf/prepare_field/name=_post_title', 'my_acf_prepare_field');
