You can always programmatically update the fields values by using the update_field() function. This page should give you more idea about it: https://www.advancedcustomfields.com/resources/update_field/.
ACF also has several hooks that allow you to modify the saving process such as “acf/save_post“. Please check this page to learn more about ACF’s hooks: https://www.advancedcustomfields.com/resources/#actions.
