I believe you can check if the options is selected or not. Something like this:
foreach( $field['choices'] as $k => $v ){
$selected = get_the_author_meta( 'customer_type', $current_user->ID );
if ($k != $selected ){
echo '<option value="' . $k . '">' . $v . '</option>';
}
}
