I think you’re missing a parameter.
The example in the docs shows:
[acf field="field_name" post_id="123"]
As you’re using a tax/cat, you would need to pass in the ID I think.
So something more like:
[acf field="field_name" post_id="term_X"] # X is the term ID you're getting the value from
