It’s a very vague question.
Could data stored in ACF field be used to create graphs and charts? Yes.
Will this likely take a lot of custom coding that ACF does not provide? Yes.
It really depends on what you going to use to show the data as graphs and charts and then working out how best to store that data in a usable way.
